Malt Cupcakes...

Malt cupcakes

Ingredients:
 195g butter
 150g caster sugar
 3 eggs
 1 1/2 tsp vanilla
 195g self raising flour
 1 tsp baking powder
 120g Horlicks (or Milo for choc malt cake)
 60ml boiling water

Method:
 Preheat oven at 170°C, prepare cupcake liners.
 Cream butter + sugar until light and fluffy. Add vanilla.
 Add eggs one at a time, mix until well incorporated.
 Fold in sifted flour with baking powder and Horlicks and alternate with milk, water until well combined. Do not STIR!!
 Divide between cupcakes liners and bake for about 25 minutes.
